METHOD

  1. Step 1
    Heat oil in medium saucepan, add onion and carrot, cook for 5 minutes or until softened. Add zucchini, cook for 2 minutes, and tomatoes, cook for a further 2 minutes.
  2. Step 2
    Combine MAGGI Apricot Chicken Recipe Base and 3 cups (750mL) of water, add to saucepan with risoni. Bring to the boil, reduce heat; simmer 10-15 minutes or until vegetables are tender and pasta is cooked through.
